What is the difference between red beans and kidney beans?

  

Kidney beans are larger and more crimson (red beans are more pink). Red beans also have a stronger "beany" flavoring. That said, you can interchange them in Meal Mentor recipes.

Thankfully no one has ever reported died from eating raw/uncooked kidney beans (sounds like a good book plot... hmm...) however, as few as 3 or 4 not fully cooked kidney beans can cause food poisoning-like symptoms. This is because kidney beans contain phytohaemagglutinin.

  

If you're buying canned beans, there is no need to worry. If you're cooking beans from scratch, however, make sure to cook them very well and test doneness by mashing with a fork rather than sampling.
