Last week's Ethiopian Lentil Stew reminded me how much I love red lentils, one of many foods I had never heard of (let alone tried!) prior to going plant-based.


My first introduction to red lentils was Indian red lentil dal. Then I discovered misr wat (an Ethiopian dish) and it remains one of my most favorite foods.


I also make the simple or Turkish red lentil soup in the app most weeks during the colder months for a simple soup.


PRESSURE COOKING: I've found that most red lentil dal or soup recipes can be made in my electric pressure cooker (4 minutes, quick release) but your PC may need up to 8 minutes. On the stove, red lentils take 15-20 minutes, so they're still pretty quick that way!
